AN EXCELLENT SOURCE OF PROTEIN

Ingredientes Veggiemaki
INGREDIENTES

300g arroz de sushi.
6 unidades de alga nori
1 aguacate
1/2 mango
200g Sojadelfia
80g vinagre arroz
40g azúcar
40g sal
soja

PREPARACIÓN

Lavar el arroz durante 10 min hasta que el agua sea transparente para quitarle el almidón.


Echar el arroz en la cazuela, cubrir con agua fría (un dedo aprox.) y poner al fuego.


Una vez que hierva , cocer 10 minutos a fuego bajo y dejar tapado sin fuego otros 10-15min.


Por otro lado, calentar la sal, el azúcar y el vinagre en una cazuela hasta que se disuelva (sin que llegue a hervir).


Cortar el mango en tiras y el aguacate en láminas.


Poner en arroz en una bandeja e irlo enfriando.


Sazonar el arroz frío con la reducción de vinagre y mezclarlo bien.


(Reservar en la nevera hasta que vayamos a utilizarlo.)


En una esterilla, colocar una hoja de alga nori con el lado áspero hacia arriba.


Mojar las manos en vinagre de arroz y tomar un puñado de arroz colocándolo sobre el alga.


Extender el arroz cubriendo aproximadamente la mitad de la hoja.


Colocar mango y aguacate creando una fila sobre el arroz a unos 2 cm del inicio de la hoja.


Cubrir las frutas con Sojadelfia y volver a añadir unas tiras de aguacate y mango encima.


Sujetar tanto el nori como el tapete y enrollar sobre el relleno, apretando para que quede un rollo consistente.


Enrollar hasta el final y humedecer el último trozo con un poco de vinagre de arroz para que el alga quede bien pegada.


Pasar el rollo a una tabla de cortar.


Cortar el rollo en 8 piezas.


Presentar con un cuenquito de soja para acompañar.

Ingredientes Veggiemaki
INGREDIENTES

2 aguacates
1/2 cebolla morada
2 rodajas de tomate
130g Sojadelfia
un manojo de cilantro
chips de maíz

PREPARACIÓN

Cortar la cebolla y el tomate en brunoise.


Picar el cilantro.


Pelar los aguacates.


En un bol, echar los aguacates, el tomate, la cebolla y el queso.


Exprimir media lima con la mano directamente en el bol con un colador debajo para recoger las pepitas.


Machacar el guacamole con un tenedor hasta conseguir la textura deseada.


Presentar el guacamole en un bol con los chips de maíz alrededor y decorar con unas hojas de cilantro.
